I don’t know about you, but breakfast seems to be the hardest meal for me to eat. I always forget about it and then realize about an hour before lunch time that I am starving. Easy breakfasts for me are key, but easy isn’t always healthy.
First you start out with the dry ingredients: the flour, oats, baking soda, salt, cinnamon and sugars.
Then I washed, peeled and chopped up two apples. The kind of apple is your preference – I like Macintosh and Granny Smiths, so which ever kind I have in my house at the time I use.
In a separate bowl I mix together the wet ingredients: water or milk, eggs, oil and vanilla.
Then I added the wet ingredients with the dry and then threw in the apples. Just stirring to combine.
Then I greased, floured and filled a muffin tin and put it in the oven.
Out came yummy, warm and HEALTHY muffins! They are yummy and filling. You can use all-purpose flour instead of whole wheat if you prefer – I usually do half and half. I also use coconut oil, but I have used vegetable oil as well as well.
Preheat oven to 400º and grease and lightly dust muffin pans with flour.
In a large bowl stir together flour, oats, sugars, cinnamon, baking powder and salt. In another bowl, mix together the milk, oil, eggs and vanilla until blended. Then, make a well in the middle of the dry ingredients and pour in the wet ingredients, stir just to combine. Mix in the apples.
Pour batter into greased muffin tins and bake for 15-20 minutes or until they pass the toothpick test. Let muffins cool on a wire rack for five minutes before removing from pans. Serve warm or completely cooled – can be frozen as well once cooled.
